created Shank Charcuterie in 2015.
Shank is a full service butcher shop and charcuterie, specializing in Italian-cured meats. We have an ever-changing lunch menu for dine-in or take home. All products are locally-sourced.
Kris is the butcher. He developed a passion for meat at a young age while hunting with his grandfather in the Colorado Rockies. That passion carried him through culinary school, professional kitchens and charcuteries, ultimately enabling him to open the charcuterie programs of several aspiring butchers. After nearly two decades of honing his trade and teaching his skills, he now brings a traditional butchery to the New Orleans Marigny.
Carolyn is the business lady, lawyer, photographer, marketer, cheerleader and honorary sous chef.
